Air Fried Vada Pav
15-16 medium size
Ingredients
For the potato mix
10 medium sized potatoes (boiled & mashed)
3-4tbsp Oil
4-5 pods garlic (finely minced)
1/4 inch pc ginger (finely minced)
Handful curry leaves
2tsp mustard seeds
1tsp cumin seeds
10 green chillies (finely chopped)
1/4tsp asafoetida (hing)
2tsp turmeric powder
1tsp Kashmiri red chilly powder (optional)
1/2 tsp sugar
Salt as per taste

For the batter
2 cups Besan (gram flour)
1/4 cup water (if air frying keep the batter thicker than normal)
2tsp baking soda
1tsp salt

Green coriander chutney
Garlic chutney – Everest Kaanda Lasun Masala everestspices
Fried whole green chillies

Method

For the potatoes –
To a heated pan add oil,green chillies,ginger, garlic & sauté for a minute.
Add cumin seeds,mustard seeds,curry leaves & asafoetida, fry till lightly golden.
Add turmeric & red chilly powder (optional), fry for a minute.
Add potatoes,sugar & salt. Mix well, cover & cook on a low flame for 4-5 minutes.
Cool the above mixture
Shape into roundels & set aside.

For the batter –
In a bowl add besan,salt & baking soda.
Whisk in water gradually to avoid a runny batter.(for air frying the batter has to be thicker than regular frying batter)
Set aside for 5-7 minutes.

Dip the potato roundels in the batter ensuring the coating isn’t very thick.

To make in the air fryer –
Set the temperature at 200C
Brush the air fryer grill with some oil
Place the battered vadas and cook for 13-14 minutes.
You don’t need to flip or turn them.
Once done remove very gently keep in mind these are more delicate than the fried version.

Assemble and enjoy !
