Asian broth with a pan seared fish
Ingredients
For the fish
100gms fish
1tsp chilly flakes
Salt and pepper to taste
For the broth
8gms butter
130 ml coconut milk
For the paste
3 pods of garlic
1/2 inch piece of ginger
5 dried red chillies soaked in warm water
1 stalk of lemon grass
Salt as per taste. (Grind the above with 20 ml of coconut milk )
Method
1.Add butter to a pot
2.Add the above paste and fry till the fat separates
3.Add any vegetable u like and sauté for about 3-4 minutes (optional)
4.Add coconut milk and cook on a low flame for about 8-10minutes
5.Season as per taste
For the fish
1.Add 3gms of butter to a heated pan
2.Add some chilly flakes
3.Add the fish and sear well on both sides
4.season with salt and pepper
