Cauliflower Egg Fried Rice & Garlic chicken
Ingredients for the rice
8gms butter
250gms cauliflower heads (grate/pulse in a food processor till the cauliflower resembles couscous)
1/2 egg
3-4 Basil leaves
3tsp garlic (chopped)
Finely chop the below
30gms spring onion head
60gms cabbage
60gms spring onion greens
50gms mushrooms
2tsp soya sauce
1tsp green chilly sauce
1tsp black pepper powder
Salt as per taste
Ingredients for the chicken
8gms butter
2tbslp garlic (chopped)
20gms onions (sliced)
50gms capsicum (sliced)
5-6 basil leaves
30gms mushrooms sliced
1tsp pepper
Salt as per taste
Method for the rice
1.Add butter to the heated wok
2.Add garlic and basil leaves sauté for 2 minutes
3.Add the spring onion , cabbage , mushrooms Sauté on a high flame for 3-4 minutes
4.Add the cauliflower and spring onion greens
5.Add the soy sauce , green chilly sauce ,salt and pepper
6.Toss for 7-8 mins till cauliflower cooks
Method for the chicken
1.Add butter to a heated wok
2.Add garlic and basil sauté till garlic crispy and golden
3.Add onions sauté for a minute or 2
4.Add the mushrooms , capsicum sauté for 2-3 minutes
5.Add chicken toss on a high flame for 4-5 minutes
6.Season with salt and pepper
Scramble the egg and garnish with !
