Coconut Corn Pulao
2 tbsp Oil
1 cup Basmati Rice
1 cup American Corn (boiled)
1 tsp Mustard Seeds
1.5 tbsp Garlic (finely chopped)
10-12 Curry Leaves
2 Kashmiri Dry Chillies (snipped into halves)
2 Onions (finely chopped)
Handful Fresh Coriander Leaves
100ml Thick Coconut Milk
1/2 tsp Turmeric Powder
1/2 tsp Red Chilly Powder
1 tsp Coriander Powder
1/2 tsp Cumin Powder
1 tsp Malwani Masala/Curry Powder/Garam Masala
Salt as per taste
Heat oil in a pressure cooker.
Add mustard seeds,curry leaves, whole red chillies and garlic.Sauté till the garlic is golden brown.
Add the onions and sauté till golden.
Add the dry spices and sauté for a minute or 2 on a low flame.
Add the corn mix well.
Add the coconut milk and fresh coriander let it come to slow boil.
Add the rice and 2 cups of water, close the pressure cooker and give it one whistle.
Open and garnish with fresh coriander leaves.
Serve with a raita & pickle.
