Dhaba Style Channa Dal
Ingredients
2 cup channa dal (split bengal gram)
2 onions (finely chopped)
3 tomatoes (finely chopped)
2 tsp cumin seeds
A pinch of asafoetida (hing)
1 tbsp Garlic (chopped)
1/2 tbsp Ginger (grated)
3 green chillies (finely chopped)
2 tsp red chilly powder
1 tsp turmeric
1 tsp coriander powder
1 tsp roasted cumin powder
2 tsp amchur (raw mango powder)
1 tsp garam masala powder
1 tsp kasturi methi (crushed)
Salt as per taste
Method
Soak the dal for 2 hours .
Boil in a pressure cooker with approx 5-6 cups of water, salt and 1/2tsp turmeric . Give it 3 whistles .
In a pan heat oil
Add the asafoetida & cumin seeds let it sputter.
Add garlic & ginger sauté for 2-3 minutes.
Add onions and sauté till dark golden brown
Add the turmeric,red chilly powder,coriander powder, cumin powder, kasturi methi, garam masala ,amchur powder & salt to taste. Sauté for 1-2 minutes.
Add the tomatoes & green chillies, cook on a low flame till the oil separates.
Add this tadka masala to your dal and cook on a low flame for 10 minutes .
Garnish with fresh coriander.
