Hena’s Asian Pesto.
200gm uncooked spaghetti
Ingredients for pesto
1 cup fresh basil
2 tbsp olive oil
3 tbsp peanuts
4 pods of garlic
1 fresh red chilly (add one more if u love spice)
1 tsp light soy sauce
1/2 tsp vinegar
1/2 tsp sugar
Salt as per taste
Boil spaghetti al dente. Add some olive oil and set aside.
Make a coarse paste using all of the above ingredients in a blender/ mortar pestle.
To a heated wok add the paste,
sauté for 1-2 minutes on a low flame.
Throw in the spaghetti and toss for a minute.
Garnish with crushed peanuts and chilly flakes.
Add sautéed mushrooms or chicken as per choice.
