1 cup chickpeas (soaked overnight)
1/4 cup tahini
1/4 cup lemon juice
2 pods garlic
Salt as per taste
Water to blend
Boil the soaked chickpeas set aside to cool.
In a blender blend the tahini with lemon juice till it turns into a white paste. If this takes too long add 2tbsps of chilled water and blend.
Add all your remaining ingredients and blend.
Adjust salt as per taste.
I do not blend with olive oil I dress it only while serving, however you can add 1-2tbsps.
Season with paprika or any other seasoning of your choice.

1.Peel the skin off the chickpeas for that absolute perfect texture. If you don’t have the time no problem it is going to turn out amazing either way.
2.Blend the chickpeas after they have completely cooled down.
3.Use chilled water to blend.
