Hena’s Pan Fried Chilly Garlic Fish.
Wash your fish filet
Pat it lightly with a paper towel to dry it completely.
Season with salt & pepper.
Light dust the filet with cornflour.
Set aside for 3-5 minutes.
Pan fry the filet till golden & crisp.
For the topping
To a heated wok add 2 tbsp oil.
Add finely minced garlic sauté till golden.
Add fresh red chillies (chopped big)
Add sliced spring onions heads and sauté.
Throw in the spring onion greens.
Season with a little salt & a pinch of Sichuan pepper (if you don’t have Sichuan you can use red chilly flakes/ black pepper as per your taste).
Cook till the onions are a nice deep golden colour.
Place filet on a platter and top with garlic chilly topping.
