Hena’s Shakshuka.
Serves 2-3
6 eggs
3 small onions
3 small tomatoes
2 red capsicum
Few mushrooms
10-15 spinach leaves ( add more mushroom and spinach if u want . Made it pretty epic)
Coriander on top
Method
Take oil in a pan
Add the onions and sauté till pink
Add the peppers sauté for 4-5 minutes
Add tomatoes , mushrooms and spinach .
Sauté for 4-5 minutes till soft
Season with
Salt as per taste
2 tsp Red chilly powder
1tsp Roasted Cumin powder
1 tsp Chilly flakes
2 tsp oregano
1/2 tsp sugar
Give it a good mix .
Add 4-5 tbsp of water, cover and cook on a low flame for 3-4 minutes .
Once the vegetables are all soft and mushy
Make wells in the mixture
Break the eggs into them one at a time .
Cover and cook on low flame till egg is cooked ( soft centre egg)
Garnish with fresh coriander & chilly flakes .
Serve in the same pan
with some sourdough bread or any bread of your choice .
