Hena’s Spinach Gomaae Salad
200gm Baby Spinach ( Blanched)
4tbsp white sesame seeds (dry roast for a minute/ two)
2tbsp light soy sauce
1/2tbsp Rice Cooking wine
Sugar or honey as per taste (3/4th /1tbsp is what I recommend)
1/2tbsp chilled water
Wash blanch and set aside the spinach in a bowl of ice cold water. (If you don’t have baby spinach use regular spinach cut them into smaller pieces)
In a mortar & pestle lightly crush the toasted sesame seeds.
Add the remaining ingredients to your sesame seeds & mix well.
Dress the drained spinach with this dressing.
Serve this salad cold.
Ps- if you like it creamier use 1 tbsp of Tahini (in place of the sesame seeds) & garnish with 1/2tsp toasted white sesame seeds.
