Paneer Paratha served with cabbage and mango pickle
Ingredients for the Paratha dough
30gms coconut flour
2tbslp psyllium husk
1tsp red chilly powder
1/2tsp baking powder
Salt to taste
Ingredients for the filling
100gms paneer (grated)
1tsp cumin powder
20gms onion (chopped)
1 chilly (chopped)
1/2 tsp red chilly powder
Method for the dough
1.mix all the ingredients in a bowl add 4-5 tblsp hot water little by little to form the dough and set aside .
Method for the filling
1.mix all the ingredients in a bowl and set aside .
Method to make the paratha
1.Make a small ball with the dough and flatten into a small round
2.Put a spoonful of the filling and and close it up to form a round ball
3.Put this on butter paper covered with another sheet of butter paper and press with ur hands till it flattens and then using a rolling pin even it out . A little filling might get exposed don’t worry about that
4.On a heated pan add a little butter put your paratha on it and cook on a low flame till a nice golden colour flip the side and cook till done
Serve with your choice of vegetables (I just sautéed some cabbage with mustard seeds , curry leaves and 1/2tsp turmeric powder) and an oil free mango pickle .
