Saffron Spanish Cauliflower Rice
200gms cauliflower rice (uncooked)
20gms mushrooms (chopped)
1 Fresh red chilly (chopped)
1 pinch of saffron
5tsp garlic (chopped)
20gms onion (chopped)
1 cup chicken stock
A pinch of lemon zest
1/2tsp lemon juice
2tsp red chilly flakes
1/2 tsp red chilly powder
3tblsp fresh coriander (chopped)
1.Add butter to a heated pan .
2.Add garlic , onions , saffron and sauté till pink .
3.Add mushrooms , chicken , fresh red chilly and sauté for 2-3 minutes . Season with salt .
4.Add the cauliflower rice and red chilly flakes . Sauté for a minute .
5.Add the chicken stock (be careful not to add too much at once) .
6.Add lemon zest , salt , red chilly powder and coriander . Cover and cook on a low flame for 5-6 minutes .
7.Finish with lemon juice .
