Sautéed Chicken With A Roast Bell Pepper Sauce & Cauliflower Rice
Ingredients for the sauce
40gms red bell pepper (roasted)
25gms tomato (roasted)
5 pods of garlic
6-7 fresh basil leaves
1 fresh red chilly (roasted)
2tsp dried thyme
2tsp dried parsley
Salt as per taste
Method for the sauce
1.Add Butter to a heated pan .. Add the garlic & red chilly sauté till golden brown
2.Add the basil leaves ,onion ,thyme & parsley. Sauté for 3-4 minutes.
3.Add the tomatoes and peppers. Sauté for 8-9 minutes
4.Add 1 1/2cup of water and let it simmer for 15-20 minutes. Set aside to Cool.
5.Grind the above mixture in a mixer grinder till a smooth consistency.
For the chicken, I sautéed it in butter with fresh red chillies and a little salt.
For the cauliflower rice, I just cooked it in some butter,garlic,red chilies & basil.Add 1tblsp lemon juice right before serving.
