Thai Lettuce Cups
Ingredients
100gms Iceberg lettuce
For the filling
20gms butter
100gms mutton mince
1 egg
1 tsp green Thai curry paste
15gms capsicum
10gms spring onion
10gms spring onion greens
2 fresh red chillies
5-6 basil leaves
1/2tsp pepper
Salt as per taste
For the pickle
20gms sliced cucumber
10gms sliced spring onion
1/2 cup water
7-8tblsp vinegar
2tsp salt
Method
For the filling
1.Add butter to a heated wok
2.Add the paste ,fresh red chillies ,basil leaves and fry till the fat separates
3.Add the onions sauté for 2 minutes ,add the capsicum and sauté for 2 minutes
4.Add the meat ,salt ,pepper and
Sauté on a low flame till the mince is cooked
5.Add the egg and cook for 2 minutes
6.Add the spring onion greens and remove from heat in a minute
For the pickle
Boil water in a pan add vinegar and salt .
Once it boils add ur cucumber and spring onion
Remove from heat , let it sit in that liquid for 15-20 mins
Strain and keep in the freezer to chill
Serve with whole lettuce leaves
